Lupo Ñam

Lupo Ñam is a project in development where we try to obtain our edible lupo, for this we have developed a series of tests with different professionals, schools of catering and artisan bakers.

The first of the edible Lupos that we can show you is the Lupo Gominola. Under the guidelines of the chef Laín Montes experiments have been developed, with different ingredients and techniques trying to convert the Lupo blocks into edible material suitable for a didactic and playful day. After several attempts, the natural gummy paste was chosen, a colorful, fun and digestive version.

Recipe of the gummy paste

1. Bring the water to a boil, and when it boils, sprinkle the agar-agar powder on it and, without leaving the fire, stir constantly and boil for two more minutes.

2. Separately, mix the strawberry puree or orange juice with sugar (150g).

3. After two minutes, remove the agar-agar from the heat, mix with the fruit and put it back on the heat, and keep stirring continuously for 2 more minutes. After that time we put the mixture in the chosen mould or moulds and let it cool at room temperature.

4. You’ll be ready in an hour, but if you’re going to keep it longer, it’s a good idea to put the sweets in the fridge. They can be stored in a covered glass jar for approximately one week.
